Welcome to Scratch and Sweet Bakes. We are a family-owned cottage bakery and small homestead farm rooted in the hills of Eastern Kentucky.

Our journey started with a simple belief: modern supermarket bread with long chemical ingredient lists has lost its soul, while true bread made with just flour, water, salt, and wild yeast is nourishing, delicious, and deeply satisfying.

Our Baking Philosophy

  • Wild Natural Fermentation: We do not use commercial dough conditioners or rapid rises. Our sourdough starter has been nurtured over years, yielding breads with complex maltiness, blistered crusts, and superior keeping qualities.
  • Unbleached & Pure: We bake exclusively with unbleached flours, stone-ground whole grains, pure butter, farm-fresh pasture eggs, and unrefined sweeteners like local Kentucky honey and dark brown sugar.
  • Made From Scratch Every Time: From browning the butter for our chocolate chip cookies to rolling the cinnamon streusel, every recipe is made entirely by hand.

Life on the Farm

Beyond our cottage ovens, our farm is home to pastured laying hens and seasonal batches of pasture-raised broilers. Our animals enjoy continuous access to sunshine, fresh mountain air, clean clover, and green pasture.

🏛️ Kentucky Regulatory Compliance & Standards

Home-Based Processing: All baked goods are prepared in a private home kitchen under Kentucky Home-Based Processing laws (KRS 217.136). We follow strict food safety, sanitation, and allergen labeling protocols.

Farm-Fresh Eggs: Sourced directly from our pastured hens, gathered daily, candled, washed, and refrigerated according to Kentucky Egg Marketing regulations.

Pastured Poultry: Raised outdoors on fresh pasture and processed on-farm under Kentucky's 1,000-bird farm processing exemption (KRS 217.015 / USDA P.L. 90-492).
